Dill Pickle Potato Salad

Dill Pickle Potato Salad with Good Foods Dill Pickle Chip Dip.

● 2 lb Yukon Gold potatoes, peeled and diced into ½-inch pieces
● 1 pkg Good Foods Dill Pickle Chip Dip
● 1/2 cup diced dill pickles
● 2 tbsp chopped fresh dill, plus more for garnish
● 2 tbsp Dijon mustard
● 1 tbsp apple cider vinegar
● 1 tsp salt
● 1/2 tsp pepper


1. Place diced potatoes in a pot of cold water and salt to taste. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and rinse under cold water to stop the cooking process.

2. Combine Good Foods Dill Pickle Chip Dip, diced pickles, chopped fresh dill, mustard, apple cider vinegar, salt and pepper in a large bowl. Mix to combine.

3. Add potatoes to dressing mixture and toss to coat. Cover and refrigerate at least 1-2 hours or overnight to allow flavors to develop.

4. Garnish with additional fresh dill and serve.
