Guac & Cilantro Tacos
Servings: 24 mini tacos
Prep time: 20 minutes
Cook time: 30 minutes
Ingredients:
- 24 mini flour tortillas
- 1 lb ground beef
- 1 ½ – 2 tsp taco seasoning (homemade recipe below)
- ¼ cup water
- Good Foods Chunky Guacamole
- Good Foods Creamy Cilantro Dip
- 2 Roma tomatoes, diced
Homemade Taco Seasoning:
- 1 tbsp chili powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp red pepper flakes
- ¼ tsp dried oregano
- ½ tsp paprika
- 1 ½ tsp ground cumin
- 1 tsp sea salt
- 1 tsp black pepper
Directions:
Ground Beef:
- Heat a large skillet over medium-high heat.
- Add ground beef using a wooden spoon to crumble. Cook and stir until the beef is completely browned, 7-10 minutes.
- Drain and discard any excess grease.
- Return ground beef to skillet and add seasoning and water; stir to combine.
Taco Shells:
- Preheat oven to 375°.
- Turn a muffin tin upside down and spray with non-stick cooking spray.
- Warm tortillas in microwave for 5-10 seconds to make them pliable.
- Place tortillas between cups on pan to create a taco shape.
- Bake for 8-10 minutes until the tortillas are golden brown and crisp.
- Remove from oven and allow to cool on rack; repeat baking with additional tortillas.
Top taco shells with seasoned ground beef, chunky guacamole, cilantro dip and diced tomatoes.
Heather Penn’s Traditional Margarita Recipe:
- Use Tajin seasoning to salt the rim
- 2oz Tequila Blanco or Resparado
- 1 oz Grand Mariner
- Top off with lime or lemon sparkling water
- Garnish with an orange slice
- 1 and 1/2 fresh squeezed limes
