Lamb Souvlaki Skewers

Lamb Souvlaki Skewers with Good Foods Feta Cucumber Dip.

Servings: 4-6
Prep Time: 40 minutes, including marinating time
Cook Time: 10 minutes


● 1/4 cup olive oil
● 3 cloves garlic, minced
● 1 tsp dried oregano
● 1 tsp dried thyme
● 1 tsp smoked paprika
● 1 tsp salt
● 1/2 tsp pepper
● 1 lb boneless leg of lamb, cut into 1-inch cubes
● Pita breads, warmed
● 1 large plum tomato, diced
● 1/2 small red onion, diced
● 1/2 cup pitted kalamata olives
● 1 pkg Good Foods Feta Cucumber Dip
● Chopped fresh dill, for garnish


1. Soak wooden skewers in a shallow dish covered with water for at least 30 minutes.

2. Meanwhile, combine olive oil, garlic, oregano, thyme, paprika, salt and pepper in a large bowl. Add lamb and toss to coat. Cover with plastic wrap, and refrigerate for at least 30 minutes, or up to 2 hours.

3. Preheat grill or grill pan over medium-high heat. Thread marinated lamb onto skewers and grill, turning occasionally, until lightly charred and an internal temperature of 145° F is reached, about 8-10 minutes.

4. Serve skewers with warmed pita breads, tomato, red onion, olives and Good Foods Feta Cucumber Dip. Garnish with dill and serve.
