Spooky Empanada Ghosts

Spooky Empanada Ghosts with Good Foods Chunky Guacamole and Avocado Salsa.

Ingredients:

● 2 pkg Good Foods Avocado Salsa
● 2 cups shredded rotisserie chicken
● 1 cup shredded cheddar cheese
● 1 (11.6-oz) pkg frozen empanada dough, thawed
● 1 large egg, lightly beaten
● 1 pkg Good Foods Chunky Guacamole

 

Directions:

1. Preheat oven 425°F and line a rimmed baking sheet with parchment paper. Mix 1 package Good Foods Avocado Salsa, chicken and cheese in a large bowl.

2. Cut empanada dough using a ghost-shaped cookie cutter or sharp knife. Into half of the ghost shapes, use a straw to cut out eyes and a mouth.

3. Place remaining ghosts onto prepared baking sheet. Top each evenly with chicken mixture. Place ghosts with face cutouts on top, and crimp edges with a fork to seal.

4. Brush empanadas with egg and bake until golden-brown, about 15-20 minutes. Serve with remaining package of Good Foods Avocado Salsa and Good Foods Chunky Guacamole.
