Good and Thankful: Thanksgiving Recipes from Heather Penn

Thanksgiving is a time for us to gather around a table and give thanks for the shared memories and moments with friends and family.

As we sit down for dinner this Thanksgiving, we want to share a few things we’re thankful for this year:

  • First and foremost, we’re thankful to have a community of employees that are passionate about providing the highest quality products to customers.
  • We are also very thankful to have the support of our customers. We experience true joy and thankfulness when you share your love for our products with us.
  • Lastly, we’re thankful that our journey doesn’t stop here. As we look towards the future, we anticipate another year full of delicious products. We will continue to provide our customers with products they can, in-turn, be proud to share with their friends and family.

Avocado Pesto Mashed Potatoes

Ingredients:

  • Salt to taste and serve hot.
  • 2 pounds Yukon gold potatoes, peeled and quartered
  • Sea salt
  • 1 – 8 oz container Good Foods Avocado Pesto

Directions:

  • Place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender.
  • Drain potatoes and put back into pot and place on stove.
  • Add Good Foods Avocado Pesto and mash potatoes until smooth.

Queso Mashed Cauliflower

Ingredients:

Directions:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in Good Foods Queso Style Dip
  • Salt and pepper to taste and serve hot.

Green Bean & Bacon Bundles with Queso

Ingredients:

  • 1 can of fresh green bеаnѕ
  • 10-12 ѕlісеѕ of thісk-сut bасоn
  • 1 – 8 oz container Good Foods Queso Style Dip
  • Sea salt and black pepper

Directions:

  • Prеhеаt oven to 400 dеgrееѕ F. Sрrау a 9 x 13 sheet pan with non-stick ѕрrау.
  • Take a piece of aluminum and roll it into a cylinder shape and wrap the bacon around it. Repeat until all bacon is used.
  • Place wrapped bacon rolls on sheet pan into the pre-heated oven and cook for 10 – 15 minutes until bacon is crispy. Cooking times will vary based on oven.
  • Meantime, de-steam green beans and blanch in a pot of boiling water for 4 – 5 minutes or until tender; drain thoroughly and salt and pepper to taste.
  • To assemble, slide the bacon rings off of the foil and place a bundle of green beans through it; please on sheet pan and repeat.
  • Place bacon wrapped green beans in the oven uncovered for 3 – 5 minutes to reheat.
  • Transfer to serving dish and drizzle with Good Foods Queso.
